How can I limit what asset of K2 component a user group can see?
You don't have to use any component or plugin to control your k2 access. You can create groups and set permissions in Joomla Users Groups. … Groups >> Add New Gorup like "Group A";
Users >> Access Levels >> Add New Access level like "Group A" and select check box "Group A" you creat in step 1;

How to get k2 item and category to use different templates?
The option to select different template was direct relation with menu item.
Than, if you dont want chage codes, i really belive you need hide menu itens and set different template there.
